Key Responsibilities:

  • Assist the Restaurant Manager in overseeing daily operations, ensuring a seamless and elevated guest experience aligned with Willow’s fine-dining standards.
  • Act as the restaurant’s sommelier, offering expert guidance on wine, sake, and beverage selections to complement and enhance the menu.
  • Curate, manage, and develop the restaurant’s wine and sake list, reflecting both classic and innovative pairings with Asian cuisine.
  • Maintain accurate beverage inventory, oversee procurement, and ensure proper storage and cellar management.
  • Lead wine and sake tastings for guests and internal staff, fostering an engaging culture of beverage appreciation.
  • Collaborate closely with the culinary team to conceptualize pairing menus and seasonal beverage offerings.
  • Train, mentor, and inspire service staff to elevate their knowledge of wines, sake, and refined hospitality etiquette.
  • Stay attuned to global beverage trends, with a focus on Asian producers, boutique wineries, and artisanal sake brewers.

Qualifications:

  • Proven experience as a Sommelier or in a dual role within a fine-dining or luxury restaurant setting.
  • Strong knowledge of wines, sake, and beverages, with certifications such as WSET Level 3, Certified Sommelier (CMS), or equivalent preferred.
  • Demonstrated ability in cellar management, procurement, and cost control.
  • Exceptional guest engagement and communication skills, with a genuine passion for crafting personalized dining experiences.
  • Deep appreciation for Asian cuisine and its unique relationship with wine and sake.
  • Strong leadership and teamwork skills, with the ability to motivate and guide the front-of-house team toward excellence.
